Cranberry Apple Pork Marinade

At my wedding shower, my soon-to-be mother-in-law gave me a set of mixing bottles with recipes printed on the side - you add the different spices in the given amounts, and then fill the bottle to the printed levels with different liquids. There are some really great dressing & marinade recipes, and this is one of my favorites!

Ingredients:

  • 1/4 cup cranberry juice
  • 1/2 cup apple juice
  • 2 tbsp. rosemary
  • 1 tsp. olive oil
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Mix everything together and shake well, then pour over pork and let marinade for at least four hours. We used pork chops, marinaded for just over a day, and cooked them on the barbeque. They were awesome - juicy and tender with a nice apple-cinnamon flavour.

For freezing, I'll put two or three pork chops in a medium Ziploc baggie, pour the marinade in, and put it in the freezer. Take it out the morning you want to eat it and it will marinade itself as it's thawing!
