Basil Chicken Breasts
variation on Oregano Pork Kabobs

We modified the ingredients of the Oregano Pork Kabobs slightly for chicken breasts. This is great sliced up on top of salads or on its own.


  • 3 boneless, skinless chicken breasts
  • 2 tbsp. olive oil
  • 1 tsp. grated lemon rind
  • 2 tbsp. lemon juice
  • 1 tsp. dried basil
  • 2 cloves garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Mix everything but the chicken, then dip the chicken in and cook on the bbq, countertop grill, oven, whatever.

Can be frozen - we put two or three chicken breasts in a Ziploc baggie with the marinade and put it in the freezer. If you take it out in the morning the day you'd like to eat it, it will marinade itself as it thaws!
