This recipe makes about enough for dinner and lunch the next day for two hungry university students.
- 1 lb. ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 green pepper, chopped coarsely
- 2 stalks celery, chopped
- 1 can kidney beans
- 1 large can tomatoes (crushed, whole, or diced)
- 2 tbsp. chili powder
Brown the ground beef with the onion and garlic. Drain if necessary, and add everything else. Stir to mix, cover, and let cook for an hour at medium heat. If it's still really watery after an hour, take the lid off. Cook for another 15 to 30 minutes.
Top with cheddar cheese for an especially unhealthy but tasty treat.
