When I was little, we would go skiing at Sunshine in the winter. We would wake up at an insanely early hour, sleepily put our winter clothes on, and proceed to nap in the van almost all the way to Banff. When we were half an hour away, my mom would wake us up and feed us cinnamon buns. It's one of my favorite memories.
Ingredients:
- 7 to 8 cups flour
- 2 tbsp. instant yeast
- 2 eggs
- 1/2 cup sugar
- 1/3 cup oil
- 3 cups lukewarm water
- 1 cup margarine
- 2 cups brown sugar
- 4 tbsp. cinnamon
- chopped walnuts, if desired
Mix 4 cups of the flour and all of the instant yeast together. In a smaller bowl, beat the eggs until frothy and add the white sugar and oil. Beat well, and add the water.
Add this to the flour and yeast mixture. Beat well. Add the rest of the flour (3 to 4 cups) until the dough is soft. Knead until smooth. Rise for 20 minutes (cover with a damp tea towel!). Roll out to a 12 inch by 36 inch rectangle. Mix the margarine, brown sugar and cinnamon together and spread on the dough. If you like, sprinkle chopped walnuts on as well. Roll and cut (using a very sharp knife helps!) Place on greased cookie sheets and rise for 30 minutes (again, covered with a damp tea towel).
Heat the oven to 350oF and bake for 15-20 minutes.
