Mom's Crepes
from my Gram Starke

Ingredients:

  • 2 cups flour
  • 2 tbsp. sugar
  • 2 eggs
  • 1/2 tsp. salt
  • 2 cups milk
  • 1/4 cup oil

Mix dry and wet ingredients separately. Make a hole in the flour, pour in the liquid mixture and mix well.

This recipe will make fairly large, flat crepes, so use a good non-stick frying pan to make it easier to flip the crepes (add a little butter or oil to it at the beginning as well).

You can use these to make fancier breakfasts, with fruit rolled in the middle and topped with whipped cream, or just put butter and syrup on and enjoy them like (more dense) pancakes. My favorite way to eat them is to put butter, sugar, and lemon juice on and roll them up. Very tasty!
