A great summertime meal to be tossed on the barbeque with some roasted potatoes, carrots and onions. Even I liked it and I'm not a fan of fish!
Recipe scaled for two.
Ingredients:
- 2 tbsp. olive oil
- 2 4 oz. halibut fillets
- 6 large tiger prawns, peeled with tail left intact
- 3 garlic cloves, coarsely chopped
- pinch cayenne pepper
- 2 tsp. chopped dill
- juice of 1/2 lemon
- 1 finely chopped green onion
- salt & pepper
Layer 2 sheets of aluminum foil and brush the inside with 1 tbsp. of the olive oil. Arrange the halibut and prawns and toss the rest of the ingredients on top. Seal it well (make sure to fold the sides securely!) and put it on the barbeque for about 10 - 12 minutes on medium heat, with the lid closed.
Thrifty's said it can also be cooked in a 450 oven for 15 minutes, but I've never tried it.
