Layered Lemon
Mom's answer to the Christmas Day dessert wars

My mom made this dessert for Christmas Day this year and I just loved it. Which was a bad thing for my waistline.

Ingredients, first layer:

  • 2 cups flour
  • 1 cup butter or margarine
  • 1 cup chopped pecans

Mix and press into 9"x13" pan. Bake at 350oF for 15 minutes. Cool.

Ingredients, second layer:

  • 2 8oz packages of cream cheese
  • 1 cup icing sugar
  • 1 envelope Dream Whip plus associated ingredients as per package (1/2 cup milk)

Beat cream cheese and icing sugar together. Prepare Dream Whip according to package and fold into cheese mixture. Spread on the first layer.

Ingredients, third layer:

  • 1 package lemon pudding & pie filling (the size that makes two pies) plus associated ingredients as per package

Prepare pudding according to package directions. Spread on the second layer.

Ingredients, fourth layer:

  • 2 cups whipping cream
  • 2 tbsp. sugar
  • 1 tsp. vanilla
  • sliced almonds

Beat the whipping cream, sugar and vanilla until stiff enough that peaks will form. Spread on the third layer and sprinkle sliced almonds on top.

It's a nice, light tasting dessert that can be great after a big meal like Christmas dinner.
