Maple Vinaigrette Dressing
from Val Walters

My mom's friend Val brought this salad to a party at my mom's house and it was so good I had to get the recipe. It's been lost in my belonging until just now when I found it in with a bunch of old receipts (what the-?). I decided to copy it here right away lest I lose the recipe yet again.

Ingredients:

  • 1/2 cup maple syrup
  • 1/2 cup balsamic vinegar
  • 1/2 cup soya sauce
  • 1/4 cup honey mustard
  • 3/4 cup salad oil
  • 1 tbsp. fresh ginger, minced
  • 2 or 3 cloves garlic, minced
  • black pepper, to taste

Do not use "pancake" syrup! This recipe really needs real maple syrup, none of that corn syrup stuff. I think you can probably blend the ingredients in a blender, or just combine in a dressing bottle and shake. Val served this dressing on a salad with mixed greens and roasted walnuts, and it was delicious.
