This is a nice, simple pasta dish that is a good alternative to spaghetti with tomato sauce... especially when you're a student and need to eat a lot of pasta.
Ingredients:
- spaghetti
- 2 tbsp. good olive oil
- 3 or 4 cloves garlic
- 2 tsp. butter
- 1/4 tsp. dried red pepper flakes
- 1/4 cup parmesan cheese - fresh if you have it
We really like garlic, so feel free to cut down the garlic to one or two cloves if you're not such a fan.
Cook the spaghetti according to package directions.
Warm the oil and melt the butter into it. Chop the garlic finely, and add it, along with the red pepper flakes, to the oil. Warm until the garlic has deepened in colour, but be careful not to burn it.
Toss with the cooked spaghetti and top with parmesan cheese. We generally use a cheese grinder and let everyone choose how much they want individually, as I love cheese and Matt can't deal with too much dairy.
