Very tasty pork kabobs for the barbeque. We ate this with roasted potatoes and grilled zucchini and peppers.
Ingredients:
- pork tenderloin
- 2 tbsp. olive oil
- 1 tsp. grated lemon rind
- 2 tbsp. lemon juice
- 1 tsp. dried oregano
- 2 cloves garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. pepper
We didn't use pork tenderloin because we are still starving students! We just bought some "pork loin cubes" or something from the grocery store and it was just fine.
Mix up all the ingredients but the pork, and then throw that in and toss to coat. Thread onto skewers (the recipe says metal, but we use bamboo - just remember to soak wooden skewers for half an hour first) and grill over medium-high heat, turning once, for about ten minutes.
We halved this recipe, and it was about right for two people. There was a nice sharp lemon taste that combined well with the pork.
